I am lucky I still have about 2 weeks before my boys' return to school. Lucky in the sense that due to my procrastinating ways I still have time to get back into the swing of things. Which means mom back in the kitchen, cooking and preparing meals at least 4 times a week if not more. I actually enjoy cooking and have a small catering business. I also enjoyed my time off this Summer.

A staple I can always depend upon when preparing not just family meals but catering menus as well is "Potatoes". Potatoes can do so much to a meal and they are very versatile. You can prepare them in so many different ways. That's why I was pretty excited to receive 2 coupons from Simply Potatoes. My family and I love Simply Potatoes right out of the package (once they've been microwaved, of course). They taste so much like home made, they even have small lumps like home made mashed potatoes. The texture and flavor is so good and buttery tasting. Because these potatoes are already peeled and cooked the hard work has already been done for you.
The Simply Potatoes website has pages of recipes for you to try when trying to get back in the swing of things for Back to School and Fall cooking. I was intrigued with the Sweet Potato Soup. I don't make soups too often, but this is one I think the boys' will enjoy.
Ingredients:
1 tablespoon olive oil
1/2 c. chopped onions
1 packaged Simply Potatoes Mashed Sweet Potatoes
1 c. whole milk1 c. chicken broth
1 tsp. dried thyme leaves
1/2 tsp. ground cumin
Instructions:
1. Heat oil in large sauce pan over medium heat. Add onions. Cook 5 to 7 minutes, stirring occasionally, or until onions are soft.
2. Stir in all remaining ingredients. Continue cooking on medium heat 15 minutes or until flavors are blended.
3.Carefully pour half of bisque into blender. Blend until smooth. Repeat with remaining bisque. Return bisque to saucepan . Cook over low heat until heated through.
